Making dinner

I was making dinner for myself and Jon and decided to post my steps to share! :) Here is mini potato zucchini latkes and pan-roasted cherry tomatoes added to pasta from Canadian Living booklet;

Latkes:
2 smaller zucchinis grated





Put into a colander, add 1/4 tsp of salt and put a plate under the colander or put over the sink and let sit for 30 mins






While that is sitting, clean, peel & grate 3 large Yukon Gold potatoes (1 Lbs)





Than put on a tea towel and squeeze out moisture





Add to a large bowl. Next beat an egg with a fork (I use an old mug)




After 30 mins, squeeze out moisture from zucchini the same way as potatoes and add to big bowl. Add the potato and spoon together. Next mix with a fork 1/4 tsp of salt, half a grated onion (I use white), egg, 3 tbsp of all purpose flour. Mix all together well, will look like it's not that thick but that's okay!




Heat a large skillet over medium heat and add small spoonfuls of the mixture. Flatten in pan and let cook 2-4 mins on each side (depending on your preference of how well you like them done and how your stove top heats up) cook until golden and edges are crisp. Use as much oil you need for each batch so they do not cook dry in the pan.










Mmmm yummy they smelt so good! Once done, place on a paper towel lined rack and let oil drain.





In this pic they look a little dark, but I think it's just the phone camera. Serve hot or cooled with sour cream! Enjoy!

Next is the pan-roasted cherry tomatoes:
Start with 4 cups cleaned cherry tomatoes





2 of these bad boys pretty much equal 4 cups





Add to a bowl with 1 clove of garlic, minced. I use the container of pre-minced garlic from Costco





I also added more than it called for as I LOVE garlic!!! & then add 1 tsp dried Italian herb seasoning, 1/4 tsp of salt, pinch of sugar and pinch of hot pepper flakes, & 2 green onions.


Mix all together and add to a heated skillet with about 1 tbsp of extra-virgin olive oil. Cook until most of the tomatoes are shriveled, add 2 tsp of balsamic vinegar. You can eat them like a side like this, or add them to pasta; which is what I did. I cooked pasta and then put it in a pan with garlic and olive oil and cook for about 5 mins. Added the tomatoes and it was delicious! I would suggest not making these for a party as you do get a few "exploders" in the bunch that kind of just burst in your mouth when you bite them! The pasta was delicious!

Poor neglected blog :(

   I am ashamed to say that this is only post 3 of the month :( my poor, poor neglected blog! I have been working lots of overtime at work, and just have not had the chance to update nor do much crafting. I am working on a few paper projects for "Myles Off Track" and also looking into schools to apply for next year! I have finally decided that I would really like to go to school for Photography. I wanted to go to school for Vet Tech, but I just know I will never be able to stand in on surgeries or put down animals (especially if its for sad reasons like no room, or someone doesn't want them anymore) I just know that I can not do it, my heart would break. Instead I have decided to go into Photography and hopefully later start a fund for some of these animals! I also figure I can volunteer at the SPCA or Humane Society to get my fix (and probably come home with 3 more animals!! haha) and take pictures of animals. Also I figure that if later I go volunteer at a camp for kids or orphanage in a third world country, I can take pictures while I am there of both people & animals! Now its just saving every penny I earn, not being ashamed to dig in couches for change, and watching my dollars and I should be GOOD TO GO!  Any Photographers out there with tips? ANY are greatly appreciated it! :)

  Also, Robyn at My Pink Stamper is having an AMAZING contest, you could win a CRICUT EXPRESSION!! WAHOOOO If I win I really want to give the Expression to my MOM! She is a Foster Parent and I think she could really use it to do "Life Books" for and with the kiddos she has come through her house! (its like a Scrapbook) We live very far away from each other, so she doesn't get to use mine :( My Mom is very creative, and although she doesn't show it much, she is very artistic too (i've seen her paper doodles!) I think if her and an Expression machine paired up, it would be a perfect match! :) hehe I hope we win, but of not, than I hope its YOU!! Having a WHALE of a time in Newfoundland!!


 Hi Everyone!!

   So blogging this trip did not really go as planned. One of my Best Friends "S" ended up in the hospital, so I spent a few days there with her. We had lots of laughs and it was just like old times, just in a hospital bed! haha! She is out for now, but still not well, so please send warm thoughts and prayers her way!
  After that we went WHALE WATCHING! It was a thrilling and amazing experience! We were so lucky because we were told there had not been whales out for over a week, and when we got there, we saw almost 30 Humpbacks! My only disappointment is that I picked up a new pack of batteries and when I put them in my Flip video camera they didn't work, said they were dead(and they were brand name too)!! Of course that was the time that a Humpback came right to the end of the boat and popped up! Luckily though, Jon came to my rescue and took a few snapshots with my camera! I was so happy when I found out that he got the shots and that you can actually SEE the whale! haha I will be putting those pics up when I get back to Edmonton!!
  After that excitement we packed our gear and headed out to Carmenville (Outside of Gander, NL) Jon's Grandparents live there, and were having a family reunion for their 50th wedding anniversary! Family had flown all over(Fort Mcmurray, Ottawa, Russia) to get together, so it was great to see everyone! I spent a lot of time with his cousins playing botchie ball (I think that's what its called) and fishing for connors (a type of fish) and crabs. We caught a bunch of crabs with the fishing pole, but of course put them back! I took some pictures of that as well that I will be sharing!
  Last night we headed to George Street for "George Fest" to see Blue Rodeo. It was a great show, the only downside was that it was pouring, and I mean POURING down rain! I got a few snapshots (not many) and a few videos (found out after that apparently you are not suppose to tape, I don't know if that's true or not as I never heard it announced and there were no signs. I was going around videoing everything and no one said anything to me!!)
  Today we are just hanging out and going to get some souvenirs and what not. We have been getting emails from the dog's sitters and apparently they are doing pretty good. Milo was having a few accidents and being a little more hyper than usual, but getting along with everyone. I was surprised and excited to hear that Mia even went into the water a bit to cool off (she NEVER does that) and was being her old self and sniffing all the flowers! That dog appreciates a nice smelling flower! haaha

   Well I'm signing off now, but will be back to add pictures tomorrow and to start editing videos.
